Looking for a Patching Primer

As a relative newbie to modding, I'm trying to get my head wrap wprapped around the whole patching process. Why do we patch, when to patch, etc. 

 

If anyone knows of a good resource that would help me understand this it would be greatly appreciated. 

 

I've installed STEP Core/Extended, but I still don't feel I under stand the "why" as to some of the processes. I'm considering SRLE: LotD Reqtified but I don't feel a have a good enough grasp of some of the concepts to delve into that ATM.
