Is there a way to know if my character has levelled up more than once before sleeping?  I haven't noticed any sound or visual effect but after sleeping I found I'd levelled up 2 or 3 times more than once.

Subtract?

The following may be redundant advice. I missed that it pertains to Survival mode where not seeing leveling may be the point, as in Requiem (in which case, you are not supposed to know!):

Pay attention to your 'level' progress indicator. Sleep as soon as it maxes/ Otherwise, you will not know unless you subtract from pre-sleep level.

If the mechanics of survival mod is similar to vanilla gameplay, you can determine the number of levels by going into the perk tree to see how many perks you have pending. In the vanilla game, you earn one perk per level and I assume survival mode is the same.

Yeah, maybe it is the point to not know in Survival Mode.

But, I don't get what you mean by subtract.

Basic scenario:  I wanted to get in some extra skill levels from a trainer before sleeping, sort of a min max strategy I guess.

I meant that if you check your level via settings, you can use that to subtract a past level from a current level ... but yes, the point is to not know or care. Just like you don't really measure experience in real life, even though you get better with practice.

The more I ponder this the more I think I would know if I levelled up, because while it's similar to becoming more proficient at a skill, I think I would know if I've become overloaded, overburdened with information or experience, that I need to take a rest or "sleep" on to integrate.
