I am starting the STEP guide from scratch and get this message upon completion of the 02- Extenders "Game Launch Test".

"A DLL plugin has failed to load correctly, blah blah. CrashLogger.dll: disabled, only compatible with versions earlier than 1.6.629.

Same thing with Scaleform Translation"

Should I just.. not use these plugin mods? I can ignore the warning and leave them enabled, but the guide says to use them.

Look at this topic:

It tracks all mods that are updated for latest skyrim version. For crash logger and scaleform use alternatives suggested in the topic.

Recently I also finished the guide and 3 mods needs to be disabled for now until they are updated:

1. Crash Logger SSE AE VR - PDB support

2. Bug Fixes SSE

3. Scrambled Bugs

A few of he Extenders haven't been updated for 1.6.640 yet, so leave them disabled for now. The next guide release will come out as soon as all of these mods are updated to be compatible with the latest game version. Hopefully soon.

Thank you. I was mortified at the idea that the game would already be unplayable because of that, and I wouldn't be able to confirm for a long time since the guide says not to launch for a while

A few corrections on what has been said before:

The Crash Logger that hasn't been updated yet, is the original one. Crash Logger SSE AE VR - PDB Support is currently being tested as a potential replacement. Meaning, you could decide if you want to use the replacement and help test it. Or wait until a decision has been made. I have tested it and it seems to be working fine, but the decision is yours to make.

A similar story for Scaleform ++: the original hasn't been updated, but there is a potential replacement Scaleform Plus Plus NG which is being tested and considered as a replacement. So again you can decide if you want to use the newer replacement. I have not tested this one, because it clashes with another mod in my extended STEP install.

Bug fixes and Scrambled bugs have no potential replacements. (Yet?) So you can install them but keep them deactivated in MO2.
