Ignore this thread, sorry guys!
Realised earlier in the guide I had edited MajesticMountains.esp instead of MajesticMountains_Moss.esp and had added ESM to the Recorded Flags of the MajesticMountains.esp instead of MajesticMountains_Moss.esp.
Once I reinstalled Majestic Mountains and edited the correct .esp file I was able to use LOOT to sort my load order.
Sorry again if I wasted anyone's time.
